Black pepper is one of the oldest used spices in the world. Along with cardamom and cinnamon, black pepper is from India and it prompted the 'spice runs' of the 18th century European kingdoms, and lead to several voyages and the discovery of America.

 An essential spice to have in the kitchen and, at one time, literally worth their weight in gold. The tiny, dried fruits were considered so valuable that they were used as currency in some parts of India, where they were referred to as “black gold.”

Black pepper's primary use is well known around the world, and is vital to our modern culinary creations . Pepper gets its spicy heat mostly from the piperine compound, which is found both in the outer fruit and in the seed.

The outer fruit layer, left on black pepper, gives it a citrusy, woody, and floral note. 

Native to south-western India, pepper is now cultivated in tropical regions around the world. Praised as a spice and a medicine since ancient times, pepper was a vital commodity in world trade for thousands of years. Black pepper is one of the most commonly used spices in the world, adding warmth and zest to savory dishes. It has been popular in India for thousands of years and is now easy to find almost anywhere on the planet. It has been employed medicinally in both Ayurveda and TCM and more recently in herbal folk healing practices.

In modern times, numerous studies have confirmed its healing properties. Pepper has a stimulant and antiseptic effect on the digestive tract and the circulatory system. Pepper is commonly taken, either alone or in combination with other herbs and spices, to warm the body, or to improve digestive function.

Pepper loses flavor and aroma through evaporation, so airtight storage helps preserve pepper's original spiciness longer. Pepper can also lose flavor when exposed to light, which can transform it to nearly tasteless. Once ground, pepper's aromatics can evaporate quickly; most culinary sources recommend grinding whole peppercorns immediately before use for this reason.

Black pepper has a multitude of uses. It can be used in nearly every dish for an added spicy touch. It can be combined with sweet, salty, and most other types of spices to provide a savory taste. The most common spice in the world, it can be used as a rub on grilling foods as well.
